What is Taco Pollo?

Well we really aren’t a half-taco-chicken-animal, though it would be cool if we were. Taco Pollos are people who enjoy the journey of life and quality tacos along the way.

Joseph Holguin – Head Taco Pollo

Having grown up 30 mins – 1hr from the Mexican border, I feel that I might know a little bit about tacos. I have no formal cooking experience, hell I can barely make a Hot Pocket, but having great cooks in my family I’ve been eating amazing, authentic Mexican food my whole life.

How did Taco Pollo begin?

When I was growing up, my Abuelita always called me and my brothers her “pollitos,” which means little chickens. Even as grown men she still calls us her “pollitos.” Also, I really like soft, CORN chicken tacos, this has been the go-to taco meal for a very long time. When I moved to Austin I found that there were tons of taco places to eat at, but I didn’t know what places were good. Lastly, I’m just a little goofy, so I thought seeing a chicken wearing a taco suit would be awesome. Mix all these together and you get EL TACO POLLO.

Traci Barrera – Taco Polloito

Traci Barrera is a born and raised Austinite who loves everything this city has to offer, especially all the local taco trailers, shacks and other unique eateries. When Traci isn’t searching for Austin’s best taco, she enjoys biking around Town Lake, exploring local coffee shops, waving a foam finger at any sporting event and of course, finding ways to “Keep Austin Weird”.
